Winter tradition at Arita (Kushimoto Town)
The moray eels caught by fish traps are cut open along their backs, impaled through and kept open by bamboo sticks, and hung outside to dry. Scenes of these sliced moray eels swaying in cold winds are an intrinsic part of winter life in this region. These sun-dried moray eels are made into tsukudani (a preserved food boiled in a sweetened soy sauce) or used as an ingredient of sukiyaki.
