Grilled ayu is a traditional non-perishable food item, made by grilling ayu thoroughly over charcoal fire. You can eat it without further cooking, but it is also used to make soup stock or as an ingredient of Japanese-style pilaf. Grilled ayu displayed at souvenir shops seem to be swimming in the air!
